Kitchen Knives Japanese Cutlery Tsugyoku

These are all “Cow Knives.”   Some are what we think of as gyutos and some santokus, but to the maker, they were all “cow knives.”

Cow knives are the ones that were designed for the Western love of beef.  They were modeled after the Westerners the Japanese interacted with a couple hundred years ago.  These are stainless steel and beautifully made by Mr. Ashi.
