Knives today come in all kinds of fancy stainless steels that require little or no maintenance. How do I care for older knives or knives with carbon steel blades?
The short answer is, “Just use the knife.”
All you have to do is clean it off after each use and as you continue to use the knife, it will develop a nice patina. The patina will help keep actual rust from forming on the blade and it looks cool as well.
