    Great value, pretty knife

    I was trying to decide which 7-inch-ish boning/filleting to get. The Wusthof Classic, the Shun, the Bark River Kalahari Sportsman (I'm still lusting after that one), and then this one came up at less than 1/2 the price. Decided to take a chance on it, and I'm really glad I did. This is a very high quality knife, with a pretty darn good steel. The red G-10 with the white liner looks very nice and feels good in the hand, and doesn't get slippy when wet. I've been using it for several months to cut up baby back ribs and filleting chicken thighs, and then just touch it up after each use on my kitchen steel, ready for the next barbecue. At this rate, I may have to put it on my hones in a few years or so... Ended up getting the matching 3 1/2 inch paring knife just because I thought they'd make a nice set, and the price of both was still way less than just the Wusthof fillet knife. It is equal in quality and appearance to the 7 inch. I haven't quite figured out how to use it yet, never had a straight edge paring knife before. I had to dig a bit to find the fillet knife on the website to write this review. Apparently it's out of stock at the moment. So that's good - it's selling well. I hope Derrick gets some more in stock. BTW - a matching sheath (like Wusthof does) would be good for "sportsman posers" like me. Or real sportsman who actually take their knives out to the woods and streams.
