"For some reason, the task of sharpening a knife intimidates a lot of people. Folks who are more than willing to get their knives dull shy away from making them sharp again, farming out the job to an 'expert.' It’s not that difficult and, like most skills, it’s a simple matter of learning how to do it the right way, followed by practice, practice, practice. If you’re willing to learn, find someone who knows how -- maybe that 'expert' you’ve been letting sharpen your knives -- and pay attention.
