The Bark River Knives Santokette II is a slightly larger and longer version of the previous Santokette. The new model is longer in the blade and handle; the handle is also wider from top to bottom.
The new Santokette II has the same basic feel and balance of the smaller version and the weight difference is less than an ounce. This was accomplished by changing the grind.
The earlier Santokette was convex ground about an inch up from the edge. It’s a very effective cutter, but the new version is full-height convex-ground. This not only improves the cutting geometry, it makes also the blade lighter and livelier in the hand.
Mike Stewart of Bark River Knives prefers the Santoku to the Euro-style chef’s knife for fast prep work. Those of you who also like this style will find this new version to be one of the handiest knives in your kitchen.
